Ingredients
- 4-5 raw chicken thigh-quarters, skin-on (thighs or drumsticks also work)
- 2-4 tablespoons of olive oil
- 1-2 teaspoons of salt
- ½ to 1 ½ teaspoons of black pepper
- 1 teaspoon of dried thyme (or 1 tablespoon fresh thyme leaves)
- 1 teaspoon of paprika
- 1 to 1 ½ teaspoons garlic powder
- ½ to 1 teaspoon onion powder
Below this point are technically optional, and can be swapped out / combined with other seasonings, or dealt with however else one chooses.
Preparation
- Heat the oven to 400℉ (200℃). Prepare a baking sheet or oven dish with olive oil or a light coating of animal lard. For easier cleanup, one may also use parchment paper. Aluminum foil works perfectly fine, too-- although personally we try to avoid using aluminum for anything being eaten or physically processed by the body. But that's just us here at JesterScribe being anal about it. Do whatever's easiest.
- Rub all the seasonings directly onto each chicken quarter. A little olive oil helps everything stick and cook into the meat. If one should feel so inclined, try tucking some seasoning underneath the skin too, especially if using fresh herbs.
- Place the seasoned chicken skin-side up on the baking sheet or dish with at least a little space between pieces, just so they aren't all crowded together.
- Bake for 40-50 minutes, or until the chicken is golden brown and cooked through (no pink inside).
- Some people let the chicken rest for 5-10 minutes so the juices can "redistribute." In my experience it makes basically no difference compared to eating it immediately, so do whatever.
