Ingredients
- 4 tilapia fillets, fresh or thawed
- 2-4 tablespoons extra-virgin olive oil
- 2-4 cloves garlic, minced (or 1 teaspoon garlic powder)
- Salt and black pepper, to taste
- 1-2 tablespoons fresh lemon juice, or lemon wedge served on side (Optional)
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- Small handful fresh young wild wood sorrel, chopped

Preparation
- Heat the oven to 400°F (200°C). Lightly grease a baking dish or sheet with olive oil.
- Lay the tilapia fillets in the dish in a single layer.
- Drizzle the olive oil over the fish and rub it in so everything is lightly coated.
- Sprinkle with garlic, salt, pepper, paprika, and oregano.
- Bake for about 12-15 minutes, until the fish flakes easily with a fork.
- Remove from the oven and immediately drizzle with fresh lemon juice.
- Scatter the chopped wood sorrel over the top just before serving.
